Whole Grain Oat Pancakes with Banana and Berries
Ingredients
Pancakes
- 1/2 cup rolled oats
- 1 cup whole wheat pastry flour
- 1 tsp baking powder
- 1 cup plant milk
- 2 mashed bananas
- pinch cinnamon
- a pinch salt
- half cup blue frozen blueberries
Berry compote
- frozen mixed berries
- no sugar added preserves
- chia seeds
Preparation
Set griddle or pan on stove top to medium heat.
Peel and mash bananas in a medium bowl.
Add remaining wet ingredients and mix very well.
Add dry ingredients except blueberries into same bowl and mix to combine.
Fold in blueberries.
Scoop 1/3 cup pancake mix and place on griddle.
Spread scoop out into a circle.
Flip pancakes when bubbles form and the top of pancake looks slightly dried, about 5 minutes.
Serve with warmed frozen berries, nut butter or fresh fruit.
