Whole Grain Oat Pancakes with Banana and Berries

Ingredients

Pancakes

  • 1/2 cup rolled oats
  • 1 cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1 cup plant milk
  • 2 mashed bananas
  • pinch cinnamon
  • a pinch salt
  • half cup blue frozen blueberries

Berry compote

  • frozen mixed berries
  • no sugar added preserves
  • chia seeds

Preparation

  1. Set griddle or pan on stove top to medium heat.

  2. Peel and mash bananas in a medium bowl.

  3. Add remaining wet ingredients and mix very well.

  4. Add dry ingredients except blueberries into same bowl and mix to combine.

  5. Fold in blueberries.

  6. Scoop 1/3 cup pancake mix and place on griddle.

  7. Spread scoop out into a circle.

  8. Flip pancakes when bubbles form and the top of pancake looks slightly dried, about 5 minutes.

  9. Serve with warmed frozen berries, nut butter or fresh fruit.
