Creamy Veggie Udon Noodles
Ingredients
Sauce
- 1 roasted bell pepper
- 2 cups of chopped tomatoes
- 1 garlic clove
- 1/2 tsp onion powder
- fresh ginger (optional)
- 2 tbsp tamari sauce
- 1 tbsp of red miso paste
- pepper to taste
- 1/2 cup plant based milk (I used almond milk)
Veggies and noodles
- yellow bell peppers
- onions
- broccoli
- mushrooms
- carrots
- 600g of cooked udon noodles
Preparation
Blend the sauce ingredients until smooth.
Sauté the veggies and cooked udon noodles in a pan.
Mix everything together and let it simmer for 15 minutes.
Add Chile de árbol for spice if desired.
