Creamy Veggie Udon Noodles

Ingredients

Sauce

  • 1 roasted bell pepper
  • 2 cups of chopped tomatoes
  • 1 garlic clove
  • 1/2 tsp onion powder
  • fresh ginger (optional)
  • 2 tbsp tamari sauce
  • 1 tbsp of red miso paste
  • pepper to taste
  • 1/2 cup plant based milk (I used almond milk)

Veggies and noodles

  • yellow bell peppers
  • onions
  • broccoli
  • mushrooms
  • carrots
  • 600g of cooked udon noodles

Preparation

  1. Blend the sauce ingredients until smooth.

  2. Sauté the veggies and cooked udon noodles in a pan.

  3. Mix everything together and let it simmer for 15 minutes.

  4. Add Chile de árbol for spice if desired.
