Persian Green Bean Rice with Meat
Ingredients
- 3 cups rice
- 300 grams ground meat
- 2 cups green beans
- 2 medium carrots
- 1 onion
- Salt, turmeric, red pepper, black pepper, and cinnamon powder to taste
- Saffron as needed
Sauce
- 1 onion
- 3 tomatoes
- 1 green pepper
- Turmeric to taste
- Red pepper to taste
Preparation
Finely chop the onion and fry until golden
Add the ground meat and spices, cover the pan, and cook on low heat until the water evaporates and it is cooked
Add the green beans and carrots and let them fry well
Cook the rice until it is half-done, then drain
Place the desired tahdig at the bottom of the pot, layer the rice and meat mixture alternately, and finally add saffron
Cover and let it steam until done
Sauce
Sauté one onion until golden
Add pureed three tomatoes, one green pepper, turmeric, and red pepper
Cook until the tomato water evaporates and the sauce is fried
Tips
Make sure the meat, green beans, and carrots are well-browned
Do not omit the cinnamon powder and saffron
