Plain Pea Pilau Dish

Ingredients

  • 2 baked beans cans of rice
  • 3-4 tablespoons ghee, plus more for drizzling
  • 1 thumb-sized piece of ginger
  • 1/2 teaspoon cumin seeds
  • 1 medium onion
  • 2 green chillies
  • Salt to taste (approximately 2 teaspoons)
  • 1/2 cup frozen peas
  • Boiling water as needed
  • Chopped coriander for garnish

Preparation

  1. Heat the ghee in a pan, add the sliced ginger and wait for it to turn a deep golden brown, which may take up to 5 minutes.

  2. Add the cumin seeds, sliced onion, green chillies and salt, then fry until the onions turn golden brown.

  3. Once the onions are golden, add the washed and drained rice and lightly roast it over a low flame for a few minutes, then add the frozen peas and mix into the rice.

  4. Add the boiling water, using the first knuckle of your index finger as a guide (about an inch), let it boil over high heat, and once most of the water is absorbed, lower the flame, cover the pan, and cook on low for 5-7 more minutes until fully cooked. Test by pressing a grain between your fingers; if it squashes easily, it's done, otherwise cook a bit longer.

  5. Garnish with chopped coriander and drizzle with a few extra teaspoons of ghee for added flavor, then enjoy as desired.

Tips

  1. Use an empty baked beans can to measure rice; this recipe uses two cans worth.

  2. This dish pairs well with chicken, meat, vegetable, or lentil curry.
