Rocket Pesto Beans with Burrata
Ingredients
- 1 jar borlotti beans or any beans
- 1 shallot
- 4 cloves of garlic
- 3-4 tablespoons rocket walnut pesto
- 124 ml dry white wine
- Burrata
- Lemon
Preparation
Fry the diced shallot in olive oil for a couple of minutes and then add the minced garlic and fry for another minute or so, seasoning as you go.
Pour the wine and let it bubble for a moment.
Add the beans and their juices, then stir through the pesto.
Bring to a quick simmer and remove from the heat, or simmer longer if you want it thicker.
Top with burrata, olive oil, lemon juice, and zest.
Notes
When heated, the pesto loses its vibrant green color but retains its flavor.
