Air-Fried Vegan Fajita Tacos
Ingredients
Tofu marinade
- 14 oz extra firm tofu, cubed
- 2 1/2 tbsp coconut aminos
- 2 tbsp rice vinegar
- 1 tbsp hot sauce
- Juice of 1 lime
Batter
- 3/4 cup all purpose flour
- 3 tbsp corn starch
- 1/2 tsp cumin
- 1 tsp dried dill
- Salt and pepper to taste
- 1 1/2 cups beer of choice
- 1 1/2 tbsp hot sauce
- Optional: panko crumbs
Vegetables
- 1 large white onion, julienne
- 1 bell pepper, julienne
- 1 tbsp olive oil
- Pinch of salt
Mexican crema
- 2 tbsp vegan mayonnaise
- 1 tsp apple cider vinegar
- Juice of 1/2 lime
- Salt to taste
Preparation
Marinating tofu
In a mixing bowl, add all marinade ingredients and mix well.
Add your cubed tofu and gently mix to coat the tofu.
Allow the tofu to marinate for 2-3 hours.
Preparing batter
Add all dry ingredients in a mixing bowl.
Whisk all ingredients until well combined.
Add your beer and mix well.
Add your hot sauce and mix well.
When the marinated tofu is ready, coat your tofu with the batter.
Add tofu to your air fryer lined with parchment paper.
Optional: Sprinkle panko crumbs for some extra crunch.
Cook for 15 minutes at 380F.
Making mexican crema
In a small mixing bowl, add all your ingredients and mix well.
Drizzle on your tacos.
Cooking vegetables and assembling
On medium-low heat, add your onions, bell peppers, and olive oil to pan.
Add salt to taste.
Cook until onions are caramelized.
Place in your tacos with your air fried tofu.
Drizzle your mexican crema.
