Healthy Crunch Supreme Tofu Wraps

Ingredients

  • 16 oz extra firm tofu
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 tablespoon adobo paste
  • 1/2 teaspoon cumin
  • Juice of 1 lime
  • 1/4 cup chopped cilantro

Fillings

  • 1/2 cup black beans
  • 1/2 cup corn
  • Handful of spinach
  • Vegan shredded cheese

Preparation

  1. Break the tofu apart with your hands.

  2. Heat olive oil, tofu, tomato paste, adobo paste, and cumin in a pan on medium-low heat. Mix well and cook for 5 minutes.

  3. Add lime juice and cilantro. Cook for 5-7 minutes.

  4. Add the mixture to a tortilla.

  5. Serve with black beans, spinach, vegan cheese, and corn.

Tips

  1. Enjoy the wrap as is or drizzle with sriracha for extra spice.
