Healthy Crunch Supreme Tofu Wraps
Ingredients
- 16 oz extra firm tofu
- 2 tablespoons olive oil
- 1 tablespoon tomato paste
- 1 tablespoon adobo paste
- 1/2 teaspoon cumin
- Juice of 1 lime
- 1/4 cup chopped cilantro
Fillings
- 1/2 cup black beans
- 1/2 cup corn
- Handful of spinach
- Vegan shredded cheese
Preparation
Break the tofu apart with your hands.
Heat olive oil, tofu, tomato paste, adobo paste, and cumin in a pan on medium-low heat. Mix well and cook for 5 minutes.
Add lime juice and cilantro. Cook for 5-7 minutes.
Add the mixture to a tortilla.
Serve with black beans, spinach, vegan cheese, and corn.
Tips
Enjoy the wrap as is or drizzle with sriracha for extra spice.
