Almond Butter Chocolate Ice Cream Sandwiches
Ingredients
Abc cookies
- 1 flax egg
- 3 tbsp creamy almond butter
- 1 tbsp coconut or olive oil
- 1 1/2 tbsp maple syrup (add more for sweeter taste)
- 1/4 cup almond milk
- 1/3 cup almond flour
- 1 tbsp crushed cashews
- 2 tbsp chocolate chips or chunks
- 1 tsp baking powder
- 1 tsp sea salt to sprinkle on top
Banana nice cream
- 1 frozen banana
- 1/4 cup full fat coconut cream
- 1/8 cup almond milk
- optional: 1 tsp ashwagandha
Preparation
Abc cookies
Mix all wet ingredients in a large bowl until creamy.
Add the dry ingredients except chocolate chips and sea salt and mix into cookie dough.
Add the chocolate chips.
Spoon dough into cookie shapes onto a baking sheet lined with lightly oiled parchment paper.
Sprinkle sea salt over top of the cookies.
Bake at 350 degrees for 10-12 minutes or until browned around the edges and cooked through the middles.
Banana nice cream
Blend until creamy in a blender.
Spoon into a glass bowl or container and freeze for at least 30 minutes.
Assembly
Assemble the sandwiches by placing a scoop of banana nice cream between two cookies
