Almond Butter Chocolate Ice Cream Sandwiches

Ingredients

Abc cookies

  • 1 flax egg
  • 3 tbsp creamy almond butter
  • 1 tbsp coconut or olive oil
  • 1 1/2 tbsp maple syrup (add more for sweeter taste)
  • 1/4 cup almond milk
  • 1/3 cup almond flour
  • 1 tbsp crushed cashews
  • 2 tbsp chocolate chips or chunks
  • 1 tsp baking powder
  • 1 tsp sea salt to sprinkle on top

Banana nice cream

  • 1 frozen banana
  • 1/4 cup full fat coconut cream
  • 1/8 cup almond milk
  • optional: 1 tsp ashwagandha

Preparation

Abc cookies

  1. Mix all wet ingredients in a large bowl until creamy.

  2. Add the dry ingredients except chocolate chips and sea salt and mix into cookie dough.

  3. Add the chocolate chips.

  4. Spoon dough into cookie shapes onto a baking sheet lined with lightly oiled parchment paper.

  5. Sprinkle sea salt over top of the cookies.

  6. Bake at 350 degrees for 10-12 minutes or until browned around the edges and cooked through the middles.

Banana nice cream

  1. Blend until creamy in a blender.

  2. Spoon into a glass bowl or container and freeze for at least 30 minutes.

Assembly

  1. Assemble the sandwiches by placing a scoop of banana nice cream between two cookies
