Banana Chocolate Chip Protein Cookies

Ingredients

  • 2 tbsp peanut butter
  • optional: 2 tbsp maple syrup (if using unsweetened protein powder)
  • 3-4 tbsp plant-based milk
  • 1/2 cup flour; use gf if needed
  • 1 serving vegan protein powder
  • 3/4 tsp baking powder
  • 1/4 cup vegan chocolate chips, plus more to taste

Preparation

  1. Preheat the oven to 350F/180C. In a large bowl, mash the banana and add in peanut butter, (optional) maple syrup, and milk

  2. Sift in flour, protein powder, and baking powder. Stir in chocolate chips, and fold until combined

  3. The resulting dough should be slightly runny (as opposed to stiff), like thick cake batter

  4. Scoop onto a lined baking tray and bake for 15 minutes, or until golden brown. Let cool and enjoy
