Maple Vanilla Plant Yogurt Cookies
Ingredients
- 1/3 cup flour (whole wheat einkorn flour by @jovialfoods)
- 2 tbsp coconut flour
- 1/2 tsp baking powder
- 1/4 cup plant yogurt
- 1 tbsp maple syrup
- Splash of vanilla extract
Preparation
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine 1/3 cup whole wheat einkorn flour, 2 tbsp coconut flour, and 1/2 tsp baking powder. Stir until well mixed.
Add 1/4 cup plant yogurt, 1 tbsp maple syrup, and a splash of vanilla extract to the dry ingredients. Stir again until the mixture is evenly combined.
On a baking tray, form cookies using the dough. You can use a spoon or your hands to shape them.
Bake the cookies in the preheated oven for 9-10 minutes, or until they are lightly golden around the edges.
Once baked, remove the cookies from the oven and let them cool on a wire rack.
