Chicken Caprese Quinoa Bake
Ingredients
- 1 cup quinoa (not cooked)
- 2 cups Rao's Homemade tomato sauce
- 1 tbsp balsamic vinegar
- 1/4 cup Greek yogurt
- 3 cups cooked chicken (cooked from 2 chicken breasts in Instant Pot)
- 1 cup shredded cheese (combination of cheddar and pecorino)
- 1/2 cup sliced cherry tomatoes
- 1/2 cup chopped basil
- 2 tsp chili flakes
- Salt and pepper
Preparation
Cook quinoa according to package instructions.
In a small saucepan, heat tomato sauce, remove from heat, and stir in balsamic vinegar and yogurt.
In a large bowl, combine cooked quinoa, chicken, sauce, cheese (leaving a little to sprinkle on top), and half of the basil.
Add chili flakes, salt, and pepper.
Spread the mixture into a large baking dish or two smaller ones.
Sprinkle with extra cheese, cherry tomatoes, and basil.
Bake for 15 minutes at 400 degrees.
