Chicken Caprese Quinoa Bake

Ingredients

  • 1 cup quinoa (not cooked)
  • 2 cups Rao's Homemade tomato sauce
  • 1 tbsp balsamic vinegar
  • 1/4 cup Greek yogurt
  • 3 cups cooked chicken (cooked from 2 chicken breasts in Instant Pot)
  • 1 cup shredded cheese (combination of cheddar and pecorino)
  • 1/2 cup sliced cherry tomatoes
  • 1/2 cup chopped basil
  • 2 tsp chili flakes
  • Salt and pepper

Preparation

  1. Cook quinoa according to package instructions.

  2. In a small saucepan, heat tomato sauce, remove from heat, and stir in balsamic vinegar and yogurt.

  3. In a large bowl, combine cooked quinoa, chicken, sauce, cheese (leaving a little to sprinkle on top), and half of the basil.

  4. Add chili flakes, salt, and pepper.

  5. Spread the mixture into a large baking dish or two smaller ones.

  6. Sprinkle with extra cheese, cherry tomatoes, and basil.

  7. Bake for 15 minutes at 400 degrees.
