Chickpea Zucchini Fritters

Ingredients

  • A whole bunch of zucchini, grated + squeezed, combined with chickpea flour + a flax egg & baked to crispy perfection
  • -2 flax eggs (2 tbsp ground flax + 6 tbsp H2O)
  • -3 large zucchini, grated
  • -1 cup chickpea flour
  • -Spices

Preparation

  1. I prepared the flax egg, grated the zucchini & left the veg to sit with salt to release some water

  2. I squeezed the zucchini through a cheesecloth, making sure to squeeze out most (but not all) the water so it would combine well with the flour

  3. In a large bowl, I mixed together the shredded zucchini, flax egg, chickpea flour & spices (salt, pepper, garlic powder)

  4. Also recommend stirring in fresh herbs like cilantro or parsley! Put the mix in the fridge to set for 5 mins, then shaped into 12 patties & stuck them in an oven at 350 for 20 mins, flipping halfway! Definitely recommend baking them for more (maybe 30), increasing the oven heat, or even pan frying them- I’m just impatient
