Classic Sugar Cookies

Ingredients

  • 1/2 cup vegan margarine
  • 1/2 white sugar
  • 3-4 tbsp non-dairy milk
  • 1 tsp vanilla extract
  • 1.5 cup flour
  • 1 tsp baking powder
  • pinch of salt

Preparation

  1. Whip together margarine, sugar and vanilla until fluffy

  2. Add milk and mix well

  3. Sift together the flour, baking powder, salt and mix with wet ingredients

  4. Dough with be crumbly at first but should stick together when squeezed

  5. Put dough in plastic wrap and chill in fridge for 1 hour

  6. Roll dough out into 1/4” thickness and cut into shapes using cookie cutter

  7. Place cookies on a parchment lined baking sheet and bake at 350 degrees F for 8-10 mins

  8. For the icing: 1 cup icing sugar, 3 tsp pure fruit juice of choice for colouring (or use food dye if preferred), 2 tsp corn syrup

  9. Whisk together until well combine. It is easiest to use an icing bag to decorate cookies with this icing. After decorating, let icing set for 1 hour
