Glazed Sugar Cookies

Ingredients

  • 2 1/2 cups (280g) almond flour
  • 1/4 cup (90g) maple syrup
  • 1/4 cup (70g) unsweetened applesauce
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional)

Preparation

  1. Mix all the ingredients to form a sticky dough

  2. Chill for 1 hour for easier rolling (recommended but not required)

  3. Preheat the oven to 350F

  4. Roll out the dough to 1/4 inch thickness between 2 sheets of wax paper (flour as necessary)

  5. Cut into shapes

  6. Use a spatula to transfer the cookies to a lined baking sheet lined

  7. Re-roll and cut out as many cookies as you can fit

  8. Bake for 12-14 minutes or until golden brown around the edges

  9. Remove from the oven and cool completely before frosting (coconut butter glaze recipe linked in my bio)

  10. Allow the glaze to set, then eat
