Cookies and Cream Stuffed Brownies

Ingredients

  • 1 1/3 cups fully cooked sweet potato (peel and mash after cooking and then measure)
  • 1/2 cup maple syrup
  • 1 cup cashew butter
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 2 Lily's Sweets cookies and cream chocolate bars

Preparation

  1. Bake the sweet potatoes ahead of time at 425F for 50 minutes.

  2. Peel and mash them.

  3. Add to a bowl.

  4. Add in the rest of the ingredients.

  5. Mix well.

  6. Line a brownie pan with parchment paper or grease it well.

  7. Add half of the brownie batter.

  8. Then add 2 cookies and cream chocolate bars.

  9. Add the rest of the batter on top.

  10. Bake at 350F for 32-34 minutes.

  11. Let cool completely then slice and remove.
