Cookies and Cream Stuffed Brownies
Ingredients
- 1 1/3 cups fully cooked sweet potato (peel and mash after cooking and then measure)
- 1/2 cup maple syrup
- 1 cup cashew butter
- 1/2 cup unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 2 Lily's Sweets cookies and cream chocolate bars
Preparation
Bake the sweet potatoes ahead of time at 425F for 50 minutes.
Peel and mash them.
Add to a bowl.
Add in the rest of the ingredients.
Mix well.
Line a brownie pan with parchment paper or grease it well.
Add half of the brownie batter.
Then add 2 cookies and cream chocolate bars.
Add the rest of the batter on top.
Bake at 350F for 32-34 minutes.
Let cool completely then slice and remove.
