Vegan Blueberry Yogurt Clusters

Ingredients

  • 200g dairy free yogurt (use a creamy one)
  • 1 tsp maple syrup (optional)
  • 1 tsp vanilla extract
  • 120g blueberries
  • 6 (ish) tsp smooth peanut butter
  • 200g dark chocolate - 70-85%
  • Desiccated coconut - optional, for topping

Preparation

  1. Mix together the yogurt, vanilla and maple syrup (if using), then stir in the blueberries so they’re all covered in yogurt.

  2. Line a tray or flat plate with baking paper and spoon the mixture in clusters onto the baking paper. Place this into the freezer for 1-2 hours until hardened.

  3. Then remove and top with a little peanut butter. Place back in the freezer for a few minutes to harden up.

  4. Then coat in melted chocolate, sprinkle with a little coconut and set in the freezer for a few minutes to harden. Enjoy!
