Delicious Pineapple Surprise Cookies with Jam

Ingredients

  • 115 g plain flour
  • 10 g almond flour
  • 15 g corn starch
  • 90 g unsalted butter
  • 10 g powdered sugar
  • Pinch of salt
  • 1-2 tbsp almond milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp turmeric powder
  • Pinch of matcha powder
  • Pineapple jam

Preparation

  1. Preheat the oven to 340°F (170°C).

  2. Cream the vegan butter and sugar in an electric mixing bowl.

  3. Add salt and vanilla, then stir well.

  4. Sift and mix the flour, almond flour, and cornstarch into the batter.

  5. Add one tablespoon of non-dairy milk to moisten and thicken the dough.

  6. Weigh out 24g of the dough and mix with matcha powder.

  7. Mix the remaining dough with 1/4 tsp of turmeric powder.

  8. Cover both doughs with plastic wrap and refrigerate for 30 minutes.

  9. Divide the pineapple filling and dough into 9 portions and roll them both into balls.

  10. Flatten each dough ball with your palms, add a pineapple ball in the middle, and fold the edges up to cover the filling.

  11. Using a pineapple-shaped mold, press the matcha dough onto the leaf part, then place the round dough in and press.

  12. Assemble the cookies on a lined baking tray.

  13. Bake for 15-20 minutes.
