Easy Vegan Flower Cookies

Ingredients

  • 150 g vegan butter, softened
  • 2 tablespoons unsweetened applesauce
  • 100 g powdered sugar
  • 300 g spelt flour or all-purpose flour
  • 50 g fruit jam or preserves

Preparation

  1. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit) and line a baking sheet with parchment paper. Gently heat the fruit jam to make it more liquid.

  2. In a mixing bowl, cream together the vegan butter, powdered sugar, and unsweetened applesauce.

  3. Mix in the flour until a dough forms.

  4. Roll out the dough to approximately 5 mm thickness and use the flower-shaped cookie cutter to cut out shapes. Arrange the flower-shaped cookies on the prepared baking sheet.

  5. Use your finger to create indents in the petals of the flower shapes and fill them with liquid fruit jam. Decorate the center with almonds.

  6. Bake for approximately 12 minutes, then allow the cookies to cool on the baking sheet.
