Lemon Blueberry Sorbet Cups
Ingredients
- 1 Häagen-Dazs Summer Blueberry & Lemon Sorbet
- 5 lemons
Blueberry jam
- 1 cup blueberries
- 1 tbsp water
- 1/4 cup sugar
- 1 tsp cornstarch
- juice and zest of 1/2 lemon
Vegan whipped topping
- 1 cup vegan whipped cream
- 1 tbsp powdered sugar
- 1/2 tbsp vanilla bean paste
Preparation
Slice the top of your lemons, then use a spoon to scoop out the inside of the lemons and save it to make some creamy lemonade later.
Scoop out a large scoop of Häagen-Dazs Summer Blueberry & Lemon Sorbet and add it to each lemon cup, then place back in the freezer while you prepare the toppings.
In a bowl, whisk together the whipped cream with the sugar and vanilla until stiff peaks form.
In a pan over medium heat, add the blueberry jam ingredients and cook for 5-7 minutes, until the blueberries have fully softened and released their flavors.
Add the vegan whipped cream to the lemon cups along with the jam, then dig in.
