Thai Mango Sticky Rice

Ingredients

  • 1 can (400ml) coconut cream or milk, divided
  • 2 large ripe mangoes

Rice

  • 1 cup uncooked glutinous rice
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/2 tsp salt

Sauce

  • 1/2 cup coconut milk
  • 3 tbsp sugar
  • 1 tsp cornstarch
  • 2 tsp water

Preparation

  1. Mix the glutinous rice, 1 cup coconut milk, 1/4 cup sugar, and 1/2 tsp salt together and simmer until creamy.

  2. For the sauce, combine 1/2 cup coconut milk and 3 tbsp sugar in a saucepan.

  3. Dilute 1 tsp cornstarch with 2 tsp water to form a slurry.

  4. Add the slurry to the sauce and heat until thickened.

  5. Top the rice with the sauce and sliced mangoes.

Notes

  1. Some coconut cream brands may be watery and can be used in place of coconut milk.
