Easy Vegan Mango Sago Dessert

Ingredients

  • 3 ripe mangoes
  • 1 cup small tapioca pearls
  • 8 cups water
  • 3 tbsp cane sugar
  • 1 can of coconut milk

Preparation

  1. Pour 8 cups of water in a saucepan and let it boil. Then add the tapioca pearls to cook for 15 minutes or until they turn translucent.

  2. Stir the mixture occasionally to prevent the pearls from sticking together.

  3. Strain the sago pearls and rinse them thoroughly to cool them off.

  4. In a separate bowl, mix the coconut milk with sugar until the sugar dissolves.

  5. Add the strained sago pearls to the sugared milk mixture.

  6. Refrigerate the mixture for 2-3 hours to set.

  7. Set aside a cup of diced mangoes for garnish. Blend the remaining mangoes to make a puree.

  8. Scoop the mango puree into a serving bowl or glass.

  9. Add the tapioca layer and top with the diced mango cubes. Enjoy the tropical flavor!
