Creamy Coconut Tapioca Pudding
Ingredients
- creamy coconut tapioca pudding:
- 2 tbsp tapioca pearl;
- 1 tbsp chia seeds;
- 3/4 coconut milk;
- 1/4 cup water;
- 1-2 tsp coconut butter or coconut oil;
Preparation
Soak the Tapioca and chia seeds with coconut milk overnight in a jar (or 30min)
The next day in the morning, just transfer the soaked tapioca in a small saucepan and add the remaining ingredients. Cook for a couple minutes until it starts to get sticky. Add a little more liquid if necessary, depending on the desired consistency
