Creamy Coconut Chia Pudding for Two

Ingredients

  • 4 tbsp (40g) chia seeds
  • 240ml coconut milk or any plant milk
  • 1 tbsp sweetener like maple syrup or date sugar
  • fresh fruit
  • whole grain granola
  • soy yogurt

Preparation

  1. In a bowl or jar, mix 4 tbsp chia seeds, 240ml coconut milk, and 1 tbsp sweetener.

  2. Place in the fridge to soak for 40 minutes to 1 hour.

  3. Optionally, add fresh fruit, whole grain granola, and soy yogurt before serving.
