Creamy Coconut Mango and Passionfruit Chia Pudding
Ingredients
- 1/2 cup chia seeds
- 2 c coconut milk
- 1 tbls coconut cream
- drizzle pure maple syrup
- 1 1/2 frozen mango cheeks
- 4 passion fruits
Preparation
Place coconut milk, cream and maple syrup into a bowl and whisk together well
Pour the chia seeds in and whisk for a minute or so, leave for a few minutes and whisk again
Leave for aprox an hour to thicken or overnight
Place mango into a food processor with a dash of coconut milk and combine until smooth and creamy
Layer pots with chia, mango and passion fruits
Serve with a few chunks of mango on top and a wedge of lime
