Creamy Coconut Mango and Passionfruit Chia Pudding

Ingredients

  • 1/2 cup chia seeds
  • 2 c coconut milk
  • 1 tbls coconut cream
  • drizzle pure maple syrup
  • 1 1/2 frozen mango cheeks
  • 4 passion fruits

Preparation

  1. Place coconut milk, cream and maple syrup into a bowl and whisk together well

  2. Pour the chia seeds in and whisk for a minute or so, leave for a few minutes and whisk again

  3. Leave for aprox an hour to thicken or overnight

  4. Place mango into a food processor with a dash of coconut milk and combine until smooth and creamy

  5. Layer pots with chia, mango and passion fruits

  6. Serve with a few chunks of mango on top and a wedge of lime
