Homemade Mango Chia Pudding

Ingredients

  • 1 over-ripe mango
  • 1/3 cup chia seeds
  • 2 TBS maple syrup
  • 3/4 cup water
  • 1/4 cup coconut milk

Preparation

  1. In a food processor, puree mango flesh until smooth and creamy and lump-free

  2. In a mason jar add the mango puree, maple syrup, coconut milk, water and stir well, then add chia seeds and whisk until well combined

  3. Let it sit for 5 min and shake it again before placing in the fridge overnight

  4. Next day, get creative and top with whatever your taste buds call out for. Mine requested pomegranate arils and blackberries
