Tropical Tapioca Parfait with Mango Pineapple Sauce

Ingredients

Mango pineapple sauce

  • 1/2 mango
  • 1 big slice pineapple
  • 1 small piece ginger
  • 2 cardamom pods

Coconut tapioca parfait

  • 1 cup coconut milk
  • 1/2 cup water
  • 4 Tbsp tapioca pearls
  • 2 Tbsp chia seeds
  • 1-2 tsp maple syrup (optional)
  • Pinch Pink Sea Salt

Preparation

  1. Soak the tapioca and chia seeds with coconut milk for 20 minutes.

  2. Transfer the soaked tapioca to a small saucepan and add the remaining ingredients. Cook for a couple of minutes until it starts to get sticky. Add more liquid if necessary to achieve desired consistency.

  3. Blend the mango pineapple sauce ingredients until smooth.

  4. Pour some of the tapioca into jars, add some of the sauce, repeat the layers, and finish with the sauce.

  5. Refrigerate until cool or enjoy hot.
