Mango Sticky Rice with Coconut Sauce
Ingredients
- 400g glutinous rice
- 4 pandan leaves
- 200ml coconut cream
- 200ml light coconut milk
- 3 tablespoons sugar
- 1 tablespoon cornstarch
- Salt to taste
- 1 mango
- Toasted sesame seeds
Preparation
Soak the glutinous rice in water for at least 2 hours.
Steam the soaked glutinous rice for about 30 minutes or until soft and tender.
In a saucepan, add 200ml coconut cream, 2 knotted pandan leaves, 1 tablespoon sugar, and 1/8 teaspoon salt. Cook for about 4 minutes on low heat and set aside.
Once the rice is ready, transfer it to a bowl. Add the cooked coconut cream mixture and mix well. Let it sit for 20 minutes or until the milk is absorbed.
Pour 200ml light coconut milk into a saucepan. Mix 2 tablespoons of the coconut milk with 1 tablespoon cornstarch, then add it back to the saucepan while stirring. Cook until the mixture thickens and becomes creamy, then remove from heat.
Serve the sticky rice with mango, pour the sauce over it, and sprinkle with toasted sesame seeds.
