Vegan Mango Sticky Rice Dessert
Ingredients
- 1 can 400ml coconut cream or milk
- 2 large ripe mangoes
Glutinous coconut rice
- 1 cup uncooked glutinous rice
- 1 cup coconut milk
- 1/4 cup sugar
- 1/2 teaspoon salt
Sauce
- 1/2 cup coconut milk
- 3 tablespoons sugar
- 1 teaspoon cornstarch mixed with 2 teaspoons water
Preparation
Rinse the glutinous rice and cook it with 1 cup coconut milk, 1/4 cup sugar, and 1/2 teaspoon salt until tender and sticky.
For the sauce, heat 1/2 cup coconut milk with 3 tablespoons sugar in a saucepan over medium heat, then stir in the cornstarch slurry and cook until thickened.
Slice the mangoes and serve the coconut rice topped with mango slices and drizzled with the sauce.
Tips
Some coconut cream brands may be watery and can be used as a substitute for coconut milk if needed.
