Vegan Crème Caramel

Ingredients

  • 1/4 cup caster sugar + 2 tbsp water
  • 1 cup coconut milk
  • 1 1/3 cup almond or soy milk
  • 1/4 cup sugar
  • 1/2 tsp vanilla powder
  • pinch of salt
  • 2 tbsp cornstarch
  • 1 tsp agar agar

Preparation

  1. Lightly oil 4 plastic moulds or ramekins. Set aside

  2. Make the caramel by combining the caster sugar and water in s small saucepan and cooking until you get a deep caramel colour. Divide between ramekins

  3. Place the coconut milk, almond or soy milk, sugar, vanilla, salt, cornstarch and agar in a small saucepan and whisk until uniform

  4. Heat the mixture, stirring often, until thick and simmering. Remove from heat and cool for 5 minutes, then pour into moulds

  5. Refrigerate for 5-6 hours, best overnight

  6. Carefully turn out onto serving plates. Enjoy
