Vegan Crème Caramel
Ingredients
- 1/4 cup caster sugar + 2 tbsp water
- 1 cup coconut milk
- 1 1/3 cup almond or soy milk
- 1/4 cup sugar
- 1/2 tsp vanilla powder
- pinch of salt
- 2 tbsp cornstarch
- 1 tsp agar agar
Preparation
Lightly oil 4 plastic moulds or ramekins. Set aside
Make the caramel by combining the caster sugar and water in s small saucepan and cooking until you get a deep caramel colour. Divide between ramekins
Place the coconut milk, almond or soy milk, sugar, vanilla, salt, cornstarch and agar in a small saucepan and whisk until uniform
Heat the mixture, stirring often, until thick and simmering. Remove from heat and cool for 5 minutes, then pour into moulds
Refrigerate for 5-6 hours, best overnight
Carefully turn out onto serving plates. Enjoy
