Sweet Sticky Rice with Mango

Ingredients

  • 1 1/2 cups glutinous (sweet) rice (found in most Asian markets or Amazon)
  • 2 cups of water
  • 1 1/3 cups well-stirred canned unsweetened coconut milk
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon sesame seeds, toasted lightly
  • 2 large mangos, peeled, pitted, and cut into thin slices

Sauce

  • 1/2 cup coconut milk from the can
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon tapioca starch

Preparation

  1. In a bowl, wash rice well until water runs clear and soak in cold water to cover for at least 2 hours.

  2. Combine the rice and water in a saucepan and bring to a boil.

  3. Cover and reduce heat to low, then simmer until water is absorbed, 15 to 20 minutes.

  4. While the rice cooks, mix 1 1/3 cups coconut milk, 1/3 cup sugar, and 1/2 teaspoon salt in a saucepan over medium heat and bring to a boil.

  5. Remove from heat and set aside, then stir the cooked rice into the coconut milk mixture, cover, and allow to cool for 1 hour.

  6. Make a sauce by mixing 1/2 cup coconut milk, 1 tablespoon sugar, 1/4 teaspoon salt, and the tapioca starch in a saucepan and bring to a boil.

  7. Place the sticky rice on a serving dish.

  8. Arrange the mango slices on top of the rice.

  9. Pour the sauce over the mango and rice.

  10. Sprinkle with sesame seeds.
