Candied Lemon Slices Dessert

Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 3 lemons

Preparation

  1. Bring 2 cups of water to a boil.

  2. Wash and thinly slice the lemons. Place the slices in the boiling water for about 2 minutes.

  3. Remove the lemons from the water and place them on a wire rack.

  4. Dump out the water. Bring a fresh 1 1/2 cups of water and 1 1/2 cups of sugar to a boil.

  5. Place the lemon slices in the water and reduce the heat to low.

  6. Boil the lemon slices for 40-45 minutes, flipping them around every 10-15 minutes.

  7. Once the lemons are done, remove them from the water and place them on the cooling rack.

  8. Once they have cooled, they are ready to enjoy.

Notes

  1. This is a vegan and gluten-free treat that combines tart lemon with sweetness, perfect as a healthy snack or dessert.
