Easy Vegan Almond Burfi Dessert

Ingredients

  • 1/2 cup sugar (we recommend brown sugar instead of refined sugar for a healthier alternative)
  • 1/4 cup water
  • 4-6 strands of saffron
  • 1/8 teaspoon of salt
  • 1.5 cups almond flour
  • 1 teaspoon vegan butter

Garnishes

  • Chopped raw pistachios for garnish
  • Almond slivers for garnish

Preparation

  1. Line a 9x5 loaf pan with parchment and keep ready. In a non-stick skillet, add the sugar, water, saffron, and salt, and mix over medium heat.

  2. Bring to a rolling boil and mix well until the sugar dissolves. Continue to simmer for 2 minutes, then add the almond flour and vegan butter, and mix well. Press and mix to hydrate the almond flour with the sugar syrup.

  3. Cook until the mixture comes together and leaves the sides of the pan, then immediately remove from heat. Transfer to the prepared loaf pan, cover with another piece of parchment, spread and even out the mixture with a spatula.

  4. Remove the top parchment. Press in the pistachios and almond slivers into the burfi, score the pieces with a knife for easier slicing, chill for half an hour, then slice with a sharp knife and store.

Notes

  1. Diwali is known as the Festival of Lights, and making sweets like burfi is a celebratory tradition.

  2. For a healthier alternative, use brown sugar instead of refined sugar.
