Mohanthal Besan Fudge Dessert
Ingredients
- 200 gm gram flour (besan)
- 4 tbs lukewarm milk
- 200 gm desi ghee
- 180 gm sugar
- 1/4 cup water
- Cardamom powder (3 pcs)
- Some kesar threads
- Some chopped almonds and cashews
Preparation
Take a mixing bowl and add 200 grams of gram flour (besan)
Take a small bowl, add 4 tablespoons of lukewarm milk and mix it well with 2 spoons of desi ghee
Add a spoonful of this mixture to the besan and keep adding 3-4 spoons step by step
Rub the besan well with both hands and then sieve the mixture using a food strainer to get an even texture
Leave it for 10-15 minutes so that the besan absorbs moisture
Heat up a pan and add 200 grams of desi ghee, minus the 2 spoons already used
Add the besan to the pan and roast continuously on medium flame until it turns golden-brown
Add 2 spoons of the milk and ghee mixture, then turn off the stove and let it rest until it reaches room temperature
Heat up another pan to make sugar syrup and add 180 grams of sugar
Add 1/4 cup of water
Add cardamom powder from 3 pieces
Add some saffron threads for color and cook it
Test the syrup by taking some between fingers; if a single string forms without breaking, it is ready for 1-string consistency
To make 1.5-string consistency, cook it for another 5 minutes
Turn off the stove, add the hot sugar syrup to the besan mixture and mix well
Transfer the mixture to a tray or tin and spread it into a thick layer
Sprinkle some chopped almonds and cashews on top and let it rest for 4-5 hours to set
Cut into square pieces, place on a serving plate, and add more dry fruits on top
