Persian Sohan Halva Dessert
Ingredients
Syrup
- 1 cup milk
- 1 cup sugar
- 1/2 cup rosewater
- 1/2 teaspoon cardamom powder
- 2 tablespoons concentrated saffron infusion
Halva
- 1 cup sangak flour
- 3/4 cup vegetable oil
- 1/2 cup milk
Preparation
Put all syrup ingredients in a pot; when sugar dissolves, set aside to cool without boiling.
Sift the flour, add milk and oil, and stir constantly on low heat.
After a few minutes, the mixture will become crumbly and doughy as the milk evaporates; this is normal.
Continue stirring until the mixture becomes smoother; this may take 40 minutes to 1 hour on low heat.
The mixture will start to change color.
When it reaches the desired color, gradually add the syrup and stir until the halva sets.
Shape it in a mold or as desired, and serve.
