Persian Sohan Halva Dessert

Ingredients

Syrup

  • 1 cup milk
  • 1 cup sugar
  • 1/2 cup rosewater
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons concentrated saffron infusion

Halva

  • 1 cup sangak flour
  • 3/4 cup vegetable oil
  • 1/2 cup milk

Preparation

  1. Put all syrup ingredients in a pot; when sugar dissolves, set aside to cool without boiling.

  2. Sift the flour, add milk and oil, and stir constantly on low heat.

  3. After a few minutes, the mixture will become crumbly and doughy as the milk evaporates; this is normal.

  4. Continue stirring until the mixture becomes smoother; this may take 40 minutes to 1 hour on low heat.

  5. The mixture will start to change color.

  6. When it reaches the desired color, gradually add the syrup and stir until the halva sets.

  7. Shape it in a mold or as desired, and serve.
