Steamed Pandan Serimuka Dessert

Ingredients

Bottom layer

  • 2 cups glutinous rice
  • 1 cup coconut milk (from a small KARA box)
  • 1 cup water
  • a pinch of salt

Top layer

  • 3/4 cup wheat flour
  • 1 tablespoon corn flour (not heaped)
  • 3/4 cup sugar
  • 2 eggs
  • 200 ml coconut milk
  • 1 cup pandan water
  • green and yellow food coloring

Preparation

  1. Wash and optionally soak the glutinous rice for 5-10 minutes.

  2. Mix all ingredients for the bottom layer and steam for 25 minutes.

  3. Press the cooked bottom layer to flatten it.

  4. Mix all ingredients for the top layer until smooth.

  5. Pour the top layer mixture over the bottom layer.

  6. Steam for another 25 minutes until cooked.

  7. Allow to cool for at least 3-4 hours before cutting and serving.

Tips

  1. Soaking the glutinous rice is optional and can be skipped if desired.
