Brazilian Cassava Cake with Coconut Sauce

Ingredients

  • 2 1/2 cups sugar
  • 1 small bottle coconut milk
  • 1 kg peeled and grated cassava
  • 150 grams butter
  • 2 eggs
  • 1 pinch salt

Sauce

  • 1/2 small bottle coconut milk
  • 4 tablespoons sugar

Preparation

  1. Preheat oven to 200Β°C. Grease a bundt pan with butter and dust with flour

  2. Beat butter and sugar until creamy. Add eggs and continue beating

  3. Add coconut milk, then cassava and salt. Mix well

  4. Pour batter into the prepared pan and bake for 40 minutes

  5. Meanwhile, mix coconut milk and sugar to prepare the sauce

  6. Pour the sauce over the cake and return to oven. Bake until golden brown

  7. Remove from oven and let cool before unmolding

Tips

  1. If grating cassava very finely, squeeze to remove some starch. I grated it coarsely
