Traditional Brazilian Cassava Cheese Cake

Ingredients

  • 4 cups grated cassava
  • 2 heaping cups grated cheese
  • 3 cups milk
  • 1 cup sugar
  • 5 eggs
  • 2 tablespoons butter
  • 1 small packet (100g) shredded coconut
  • 1 tablespoon baking powder

Preparation

  1. Beat the eggs as for an omelette, pour into a bowl, and mix with the remaining ingredients except the baking powder; add the baking powder and mix very well

  2. Pour the batter into a buttered baking pan and bake in a medium oven for about 50 minutes until golden brown

  3. Test with a toothpick for doneness; it should come out clean

Tips

  1. For best results, grate the cassava finely using a fine grater (like the one for cheese and corn)

  2. This cake is wonderful and highly recommended
