Traditional Brazilian Cassava Cheese Cake
Ingredients
- 4 cups grated cassava
- 2 heaping cups grated cheese
- 3 cups milk
- 1 cup sugar
- 5 eggs
- 2 tablespoons butter
- 1 small packet (100g) shredded coconut
- 1 tablespoon baking powder
Preparation
Beat the eggs as for an omelette, pour into a bowl, and mix with the remaining ingredients except the baking powder; add the baking powder and mix very well
Pour the batter into a buttered baking pan and bake in a medium oven for about 50 minutes until golden brown
Test with a toothpick for doneness; it should come out clean
Tips
For best results, grate the cassava finely using a fine grater (like the one for cheese and corn)
