Simple Brazilian Rice Cake
Ingredients
- 4 eggs
- 2 cups raw rice
- 1/2 cup sugar
- 1 cup milk
- 1 cup oil
- 1 package shredded coconut
- 1 tablespoon grated cheese
- 1 tablespoon baking powder
Preparation
Soak the rice in water for 8 hours
Drain the rice
Blend the soaked rice with milk and oil until smooth
Beat the eggs and sugar in a bowl until light and fluffy
Gradually add the blended rice mixture, shredded coconut, grated cheese, and baking powder, mixing until combined
Grease a cake pan with flour and margarine
Pour the batter into the prepared pan
Bake in a preheated oven at 350Β°F (180Β°C) for 35-40 minutes, or until a toothpick inserted comes out clean
