Simple Brazilian Rice Cake

Ingredients

  • 4 eggs
  • 2 cups raw rice
  • 1/2 cup sugar
  • 1 cup milk
  • 1 cup oil
  • 1 package shredded coconut
  • 1 tablespoon grated cheese
  • 1 tablespoon baking powder

Preparation

  1. Soak the rice in water for 8 hours

  2. Drain the rice

  3. Blend the soaked rice with milk and oil until smooth

  4. Beat the eggs and sugar in a bowl until light and fluffy

  5. Gradually add the blended rice mixture, shredded coconut, grated cheese, and baking powder, mixing until combined

  6. Grease a cake pan with flour and margarine

  7. Pour the batter into the prepared pan

  8. Bake in a preheated oven at 350Β°F (180Β°C) for 35-40 minutes, or until a toothpick inserted comes out clean
