Sweet Brazilian Coconut Milk Roll
Ingredients
- 3 eggs
- 1 cup milk
- 10 grams yeast
- 8 tablespoons oil
- 1/2 can coconut milk
- 16 tablespoons sugar
- 1 pinch salt
- 1 and 1/5 cups wheat flour
- butter to taste
- sugar to taste
- coconut to taste
Glaze
- 2 cups milk
- 1 cup sugar
- grated coconut to taste
Preparation
Combine milk, yeast, wheat flour and mix well to form a porridge, then set aside
Blend oil, coconut milk, and eggs in a blender
Pour into a bowl and add the reserved porridge mixture
Mix well, add sugar and salt, and gradually add wheat flour until it reaches the right consistency
Once the dough is homogeneous and smooth, cover and let rest for 30 minutes
Roll out the dough and spread butter, sugar, and coconut
Roll like a Swiss roll and cut into slices
Let rest for another 45 minutes
Bake until golden
Finishing
Boil the glaze ingredients well
Pour over the hot rolls and return to the oven briefly
Remove from oven and sprinkle grated coconut
