Easy Cassava Cake with Coconut Sauce

Ingredients

  • 2 1/2 cups sugar
  • 1 small bottle coconut milk
  • 1 kg peeled and grated cassava
  • 150 grams butter
  • 2 eggs
  • 1 pinch salt

Sauce

  • 1/2 small bottle coconut milk
  • 4 tablespoons sugar

Preparation

  1. Preheat the oven to 200Β°C and grease a bundt pan with butter and flour

  2. Beat the butter with the sugar until creamy

  3. Add the eggs and continue beating

  4. Add the coconut milk and then the cassava and salt, mixing well

  5. Pour the batter into the prepared pan

  6. Bake for about 40 minutes

  7. Mix the coconut milk and sugar for the sauce

  8. Pour the sauce over the cake

  9. Return the cake to the oven and bake until golden brown

  10. Remove from the oven and let cool before unmolding

Tips

  1. If grating cassava very finely, squeeze to remove some starch; grating coarsely is acceptable
