Minas Gerais Cheesy Coconut Cake
Ingredients
- 4 eggs
- 2 tablespoons butter
- 3 cups sugar
- 1 cup all-purpose flour
- 2 small cans coconut milk
- a pinch of salt
- 1 1/2 tablespoons baking powder
- 6 tablespoons cream cheese
- 4 tablespoons grated Parmesan cheese
- 300g fresh coconut, coarsely grated
Preparation
Blend all ingredients in a blender until smooth
Grease a deep tube pan and pour in the batter
Bake at high temperature until golden brown
