Carrot Cake with Chocolate Frosting
Ingredients
- 2 to 3 eggs
- 1 cup vegetable oil (used 3/4 cup)
- 2 medium carrots
- 1 pinch salt
- 2 cups all-purpose flour
- 2 cups sugar (used 1.5 cups)
- 1 tablespoon baking powder
Chocolate frosting
- 1 bar milk chocolate
- Milk (added gradually to desired consistency)
Traditional frosting
- 8 tablespoons sugar
- 4 tablespoons chocolate powder
- 1 tablespoon margarine (heaping)
- 2 tablespoons milk
Preparation
Blend the eggs, oil, carrots, and salt in a blender and set aside
In a bowl, combine flour, sugar, and baking powder
Pour the blended mixture into the bowl and mix well
Transfer to a baking pan greased with margarine and flour
Bake in a preheated oven until golden and cooked through
Apply the frosting over the cake while it is still hot
Chocolate frosting
Chop the chocolate bar
Melt it in the microwave for 40 seconds
Gradually add milk and stir until the desired consistency is achieved
Traditional frosting
Mix sugar, chocolate powder, margarine, and milk together
Heat the mixture until it becomes homogeneous
Spread it over the hot cake
