Brazilian Cassava Cake with Coconut Milk
Ingredients
- 500 g grated cassava (raw)
- 1 1/2 cups sugar (270g)
- 2 tablespoons butter (40g)
- 2 eggs
- 200 mL coconut milk
Preparation
Combine sugar, eggs, and butter in a large bowl
Mix well until sugar dissolves, then add coconut milk
Add grated cassava and mix until well combined
Pour the batter into a buttered baking pan
Bake in a preheated oven at 180Β°C for about 50 minutes
Let cool, then unmold and serve
Notes
The batter will be a bit runny because it does not contain wheat flour
