Brazilian Cassava Cake with Coconut Milk

Ingredients

  • 500 g grated cassava (raw)
  • 1 1/2 cups sugar (270g)
  • 2 tablespoons butter (40g)
  • 2 eggs
  • 200 mL coconut milk

Preparation

  1. Combine sugar, eggs, and butter in a large bowl

  2. Mix well until sugar dissolves, then add coconut milk

  3. Add grated cassava and mix until well combined

  4. Pour the batter into a buttered baking pan

  5. Bake in a preheated oven at 180Β°C for about 50 minutes

  6. Let cool, then unmold and serve

Notes

  1. The batter will be a bit runny because it does not contain wheat flour
