Brazilian Corn Cake with Coconut and Cheese
Ingredients
- 3 cups green corn (about 4 ears)
- 3 large eggs
- 1/2 cup oil
- 1/2 cup coconut milk
- 1 1/2 cups sugar
- 1/4 cup fine cornmeal
- 1/3 cup grated cheese
- 1 tablespoon baking powder
Preparation
Preheat the oven to 160Β°C (320Β°F)
Line a 22 cm ring mold with corn husks
Blend all ingredients except the baking powder in a blender until smooth
Add the baking powder and pulse just until combined
Pour the batter into the prepared mold
Bake for approximately 45 minutes
