Brazilian Corn Cake with Coconut and Cheese

Ingredients

  • 3 cups green corn (about 4 ears)
  • 3 large eggs
  • 1/2 cup oil
  • 1/2 cup coconut milk
  • 1 1/2 cups sugar
  • 1/4 cup fine cornmeal
  • 1/3 cup grated cheese
  • 1 tablespoon baking powder

Preparation

  1. Preheat the oven to 160Β°C (320Β°F)

  2. Line a 22 cm ring mold with corn husks

  3. Blend all ingredients except the baking powder in a blender until smooth

  4. Add the baking powder and pulse just until combined

  5. Pour the batter into the prepared mold

  6. Bake for approximately 45 minutes
