Brazilian Sweet Corn Cake with Coconut and Cheese
Ingredients
- 3 cups fresh corn (about 4 ears)
- 3 large eggs
- 1/2 cup oil
- 1/2 cup coconut milk
- 1 1/2 cups sugar
- 1/4 cup fine cornmeal
- 1/3 cup grated cheese
- 1 tablespoon baking powder
Preparation
Blend all ingredients except baking powder in a blender until smooth
Add baking powder and pulse just until combined
Line a 22 cm tube pan with corn husks
Pour the batter into the prepared pan
Bake in a preheated oven at 160Β°C for approximately 45 minutes
