Brazilian Sweet Corn Cake with Coconut and Cheese

Ingredients

  • 3 cups fresh corn (about 4 ears)
  • 3 large eggs
  • 1/2 cup oil
  • 1/2 cup coconut milk
  • 1 1/2 cups sugar
  • 1/4 cup fine cornmeal
  • 1/3 cup grated cheese
  • 1 tablespoon baking powder

Preparation

  1. Blend all ingredients except baking powder in a blender until smooth

  2. Add baking powder and pulse just until combined

  3. Line a 22 cm tube pan with corn husks

  4. Pour the batter into the prepared pan

  5. Bake in a preheated oven at 160Β°C for approximately 45 minutes
