Malaysian Steamed Apam Solo
Ingredients
- 1/2 cup wheat flour
- 1/2 cup rice flour
- 1/2 cup sugar
- Pinch of salt
- 1/4 cup oil
- 1 1/4 cups water
- 1 tablespoon yeast
Optional fillings
- Red bean paste
- Chocolate filling
- Or other desired fillings
Preparation
Mix all ingredients together until there are no lumps, but do not blend.
Let the batter rest for 30 minutes.
While the batter is resting, grease the molds with oil and prepare the filling if desired.
After 15 minutes of resting, start heating the steamer until the water boils.
When the batter has risen, stir it to deflate, optionally add Eno or a leavening agent for extra softness, and add food coloring.
Ensure the steamer water is boiling, then pour the batter into the prepared molds.
Immediately place the molds in the steamer and steam for 15 minutes on low heat.
The apam solo is done and ready to serve.
Tips
The filling will sink to the bottom naturally during steaming.
Adding Eno or similar is optional and helps for a softer texture.
