Malaysian Pandan Glutinous Rice Balls in Coconut Sauce
Ingredients
Dough
- 3 cups glutinous rice flour
- 1 cup pandan juice (blend pandan leaves with water as needed)
Filling
- 2 cups sugar
- 1 cup water
- 1 grated coconut
- 3 tablespoons granulated sugar
- 2 pandan leaves
- pinch of salt
Sauce
- 5 cups thick coconut milk
- 8 tablespoons rice flour
- 8 tablespoons wheat flour
- 1 teaspoon salt
Preparation
Preparing the dough
Combine all dough ingredients to form a dough
Preparing the filling
Cook all filling ingredients together until done
Preparing the sauce
Cook all sauce ingredients until thick and well combined
Assembling and cooking
Boil water in a pot
Shape the dough into balls and stuff with the filling similar to making kuih melaka
Boil the balls in the water until cooked
Remove from water and set aside
Serve the rice balls with the sauce
