Thai-Style Coconut Sticky Rice
Ingredients
Sticky rice
- 2 cups glutinous rice
- 2 cups water (or 1.75 cups if using milk glutinous rice)
- 2 tablespoons corn oil
- Salt to taste
- Pandan leaves
Coconut sauce
- 2 cups coconut milk
- 2 cups water
- Sugar to taste
- Salt to taste
- Pandan leaves
- 1 tablespoon cornstarch mixed with water
Preparation
Cook the sticky rice in an electric rice cooker with the specified water amount like normal rice, adding corn oil, salt, and pandan leaves.
Stir the rice only once after the switch pops up and let it sit.
For the coconut sauce, combine coconut milk, water, sugar, salt, and pandan leaves in a pot.
Cook over low heat until boiling, stirring occasionally, then add the cornstarch mixture and stir until thickened.
Tips
Use yellow food coloring if you want the rice to have a yellow hue.
