Sticky Rice Cake with Beef Floss

Ingredients

  • 300 grams glutinous rice, soaked overnight (or 18 hours)
  • 200 ml instant coconut milk
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 2 pandan leaves
  • Beef floss for filling
  • Banana leaves as needed

Preparation

  1. Steam the glutinous rice for 15 minutes until half-cooked.

  2. Boil the coconut milk, salt, sugar, and pandan leaves until it boils. Turn off the heat.

  3. Add the rice to the coconut milk mixture and stir until the milk is absorbed.

  4. Steam the rice again until cooked, about 30 minutes.

  5. Divide the rice into two parts, spread in a greased pan or lined with plastic or banana leaves. Compact it by pressing lightly with fingers. Spread beef floss evenly on one part. Place the remaining rice on top, spread and compact. Cut into 8 pieces.

  6. Wrap the lemper in banana leaves and grill briefly on a Teflon pan. Ready to serve.

Tips

  1. Wash the glutinous rice clean before soaking in clean water overnight with water above the rice level. Drain the soaking water before steaming.
