Indonesian Chicken Sempol Skewers

Ingredients

  • 250g chicken fillet
  • 100g tapioca flour
  • 2 tbsp all-purpose flour
  • 1 egg
  • 1 finely sliced green onion stalk
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1/2 tsp sugar
  • 2 cloves minced garlic
  • stock powder to taste
  • 25ml cold water
  • satay skewers

Coating

  • 1 beaten egg

Preparation

  1. Blend all ingredients except tapioca flour and green onion until smooth.

  2. Transfer the mixture to a bowl, add tapioca flour and green onion, and mix well.

  3. Test a small amount of dough in boiling water; add more salt if it tastes bland.

  4. Oil your hands with vegetable oil, then wrap the dough around satay skewers until all dough is used.

  5. Boil the sempol in boiling water until they float, then remove and drain.

  6. Fry the sempol, coated with beaten egg, over low heat until cooked.
